Farmer Amy's Oat Cottage Cheese Pancakes

These simple, quick pancakes are SO GOOD and packed with protein. They will give you sustained energy, and don't bog you down like traditional pancakes. Made with mostly locally grown ingredients, you just can't go wrong. I love to top mine with some raw yogurt from Huckins Farm, fresh fruit, and maple syrup!

Ingredients
- (1 cup) Freshly Rolled Oats
- (1/2 cup) Cottage Cheese
- (2 eggs) Dozen Farm Fresh Eggs
- (1 tbsp) Vanilla Extract
- (2 tbsp) Half Gallon Raw Milk
- (1/2 tsp) Baking Powder
- (Dash) Salt
- (2 tbsp) Quart Maple Syrup
- (Tab or two for cooking) Butter
Directions
Put all ingredients into a blender. Blend until smooth, about a minute.
Heat up your favorite pancake pan on medium heat and add a tab or two of butter. Once butter is melted and pan is hot drop on your batter and make pancakes! I like to add blueberries to mine.
Top with yogurt, fresh fruit, and maple syrup. Devour.
